White Bean and Ham Soup

Ingredients -
2 (15.5 ounces) cans Great Northern Beans, rinsed and drained
2 tablespoons Unsalted Butter
2 medium Carrots, diced
1 small Onion, chopped
2-1/4 cups Water
1-1/2 cups cubed Fully Cooked Ham
1/2 teaspoon Salt
1/4 teaspoon Fresh Ground Black Pepper
1 Bay Leaf
 
Preparation:

1. Add 1 can of Great Northern beans to small bowl. With wooden spoon or potato masher, slightly mash beans. Set aside.

2. Add butter to saucepan. Sauté carrots and onion 3-4 minutes.

3. Stir in water, cubed ham, salt, pepper, bay leaf, and mashed beans.

4. Cook over medium heat until hot.

5. Serve immediately.
