Chicken Chili

Ingredients -
2 Boneless Skinless Chicken Breasts, Cooked And Chopped
4 ounces Tomato Paste
12 ounces Tomato Sauce
1 can Chili Beans, Undrained
3 tablespoons chili powder
1 tablespoon cumin
1 1/2 teaspoon red pepper
2 tablespoons Hot Sauce
1 Stalk celery, chopped fine
1/2 large onion, chopped fine
2 Bay Leaf
Rice
 
Preparation:

1. Add chopped cooked chicken breast pieces, tomato paste, tomato sauce, chili beans, chili powder, cumin, red pepper, hot sauce, celery stalks, large onion, and bay leaf to stockpot.

2. Simmer over low heat 45 minutes. Stir occasionally.

3. Remove bay leaves.

4. Serve over hot rice.

Chipotles
If you cant find chipotle peppers at your supermarket, substitute minced jalapeno and a few drops of liquid smoke.
