Thai Tomato Soup

Ingredients -

2 cups Vegetable Stock
1 tablespoon grated peeled Fresh Ginger Root
2 cups chopped Bok Choy
1/4 cup chopped Fresh Basil Leaves
1 (48 ounces) can Tomato Juice
3-4 tablespoons Soy Sauce
1 cup Bean Sprouts
1/2 cup Coconut Milk
2 tablespoons Fresh Lime Juice

 
Preparation:

1. Add vegetable stock, grated ginger, chopped bok choy, and chopped fresh basil.

2. Simmer 10 minutes.

3. Stir in tomato juice, soy sauce, and bean sprouts,

4. Simmer 10 minutes.

5. Stir in coconut milk and fresh lime juice.

6. Serve hot.

Do not purchase potatoes that have blemishes, soft spots, sprouting eyes, or shriveled skin. But fresh looking potatoes that are firm to the touch, and free from signs of aging.
