1. Add vegetable oil to stockpot. Heat over medium-high heat.
2. Sauté minced garlic 30 seconds.
3. Stir in chicken broth.
4. Bring to a boil.
5. Gradually drop in Chinese dumplings.
6. Return to a boil. Reduce heat to low. Simmer 10 minutes.
7. Stir in snow peas, sliced green onions, soy sauce, and grated ginger.
8. Simmer 5 minutes.
9. Stir in spinach. Simmer until spinach wilts.
