Avocado Chicken Soup

Ingredients -

1 small White Onion, chopped coarsely
2 cloves Garlic, chopped
1/2 Jalepeno Chili Pepper, chopped and seeded
1 tablespoon Olive Oil
6 cups Chicken Broth
1-½ cups cooked Boneless, Skinless Chicken Breast, cubed
1/2 cup Fresh Cilantro Leaves
2 firm Avocados, pitted and cut into ½” cubes
2 tablespoons Fresh Lime Juice
Coarse Salt
Yellow Corn Tortilla Chips

 
Preparation:

1. Heat olive oil in skillet over medium heat. Add onion, garlic, and jalapeno. Saute until onion is tender.

2. Add chicken broth and simmer 10 minutes.

3. Add chicken, fresh cilantro, avocado, and fresh limejuice,

4. Season with salt, to taste.

5. Simmer 5 minutes.

6. Garnish with tortilla chips.
