Goulash

Ingredients -

2 tablespoons Butter
1 large White Onion, diced
2 tablespoons Hungarian Paprika
1 pound Beef Chuck, cut into 1/2-inch cubes
8 cups Water
3 Garlic Cloves, finely chopped
2 tablespoons Vinegar
1 tablespoon Tomato Paste
1 tablespoon Caraway Seeds
1 teaspoon Dried Marjoram
Coarse Salt
Fresh Ground Black Pepper, to taste
2 - 3 medium New Potatoes, peeled and diced

 
Preparation:

1. Add butter to stockpot. Heat over medium heat.

2. Sauté onion 5 minutes or until begins to soften.

3. Stir in paprika, sauté 1 minute.

4. Add beef chuck steak and brown lightly on all sides.

5. Stir in water, garlic, vinegar, tomato paste, caraway seeds, dried marjoram, coarse salt, and fresh ground black pepper.

6. Simmer, covered for 60 minutes.

7. Stir in diced potatoes and simmer 20 minutes.
