Chicken Rotini Soup

Ingredients -

2 cubes Chicken Bouillon
1 (12 ounces) package Rotini Pasta
13 cups Chicken Broth
4 cups Water
6 Celery Stalks, chopped
1 White Onion, chopped
4 Carrots, chopped
1-1/2 pounds Boneless, Skinless Chicken Breast, cut into bite size pieces
Garlic Powder, to taste
1 teaspoon Onion Powder
Salt and Pepper, to taste

 
Preparation:

1. Cook Rotini pasta according to package directions. Drain and set pasta aside.

2. Add chicken broth and water to stockpot. Heat over high heat.

3. Stir in chopped celery, chopped onion, chopped carrots, and chicken pieces.

4. Bring to a boil over medium-high heat. Stir in reserved pasta.

5. Reduce heat to low.

6. Season with garlic powder, onion powder, salt and pepper.

7. Simmer 20 minutes.

8. Serve hot.

 
 


Soup Making Tip
Rotini Pasta
Rotini pasta can take on a lot of water and get very large. Look for baby pasta shapes to use in place of the rotini, as possible substitution.

Substitute 1/4 cup minced onion for the onion powder if desired.
