Onion Soup

Ingredients -

4 tablespoons Butter
2 tablespoons Vegetable Oil
2 pounds Sweet Yellow Onions, sliced thin
1 teaspoon Coarse Salt
3 tablespoons All-Purpose Flour
2 quarts Beef, Chicken, or Vegetable Stock
Fresh Ground Black Pepper, to taste
French Bread Slices
grated Parmesan Cheese

 
Preparation:

1. Add butter to stockpot. Melt over low heat.

2. Add oil, onions, and salt. Sauté onions 15-20 minutes, stirring constantly.

3. Sprinkle flour into onions. Stir and cook 2 more minutes.

4. Stir in stock, and simmer 30 minutes.

5. To Serve:
6. Toast French Bread under broiler.

7. Ladle soup into individual bowls.

8. Place bread slices over soup.

9. Garnish with grated Parmesan cheese.

Onions
2 pounds of onion equals about 8 cups of diced.

Use beef stock for this recipe unless you truly desire chicken or vegetable.
