Quick French Onion Soup

Ingredients -

1 tablespoon Butter
1 large Sweet Onion (such as Vidalia or Texas Sweet), sliced thin
1 tablespoon Brown Sugar
1 (10-1/2-ounces) can Condensed Beef Broth
1-1/2 cups Water
1/2 teaspoon Ground Black Pepper
4 (1-inch-thick slices) French Bread
1/4 cup grated Swiss or Gruyere Cheese
1 tablespoon Chopped Fresh Parsley Leaves

 
Preparation:

1. Add butter to stockpot. Melt over medium heat.

2. Stir in onion and brown sugar. Sauté, stirring constantly, for 10 minutes until onions are soft and golden brown.

3. Stir in condensed beef broth and water.

4. Bring to a gentle boil over medium-high heat.

5. Simmer 10 minutes.

6. Stir in pepper.

7. Place bread slices on baking sheet. Sprinkle with cheese.

8. Place under preheat broiler a few seconds to melt cheese.

To serve:
1. Ladle soup into 4 individual soup bowls

2. Place cheese-topped bread slices in each bowl.

3. Garnish with chopped fresh parsley.

Sweet onions should be stored on the conuter or other open area at room temperature.

Substitute your favorite white cheese for the Jarlsberg, if necessary or desired.
