Potato Cheese Soup

Ingredients -

2 tablespoons Butter
4 cups Frozen Cubed Hash Brown Potatoes, thawed
1 medium Onion, finely chopped
1 tablespoon All-Purpose Flour
4 cups Milk
3 ounces real Bacon Bits
1/2 teaspoon Salt
1/4 teaspoon black pepper
2 cups (8 ounces) shredded Sharp Cheddar cheese

 
Preparation:

1. Add butter to stockpot. Melt over medium heat.

2. Stir in hash brown potatoes, chopped onion, and sauté 7 minutes, stirring frequently.

3. Stir in the flour, coating vegetables.

4. Stir in milk, bacon bits, salt and pepper.

5. Simmer 20 minutes, stirring occasionally.

6. Gradually stir in cheese in small batches, stirring each batch until it melts.

7. Serve hot.

 
 


Soup Making Tip
Onion
A regular white onion is a good choice. The sauteing takes some of the bite out of the onion, but stills leaves plenty of flavor.

Substitute 1 crisply fried and crumbled slice of real bacon for the bacon bits, if desired.
