Lobster Bisque

Ingredients -

6 tablespoons Butter
6 tablespoons All-Purpose Flour
1 teaspoon Salt
1/4 teaspoon Ground Black Pepper
1/2 teaspoon Celery Salt
4 1/2 cups Milk
1 1/2 cups Chicken Stock or Broth
3 tablespoons minced Onion
3 cups cooked Lobster Meat, shredded
1 tablespoon Paprika
1/2 cup Light Cream

 
Preparation:

1. Add butter to a large stockpot. Heat over medium heat.

2. Blend in the all-purpose flour, salt, celery salt, and fresh ground black pepper.

3. Gradually stir in the milk and then stir in the stock.

4. Simmer over low heat, stirring until the soup thickens.

5. Add minced onion and lobster meat.

6. Season with paprika.

7. Simmer 10 more minutes.

8. Stir in the light cream and simmer another minute.

9. Remove from heat and serve.

Use half-and-half or heavy cream if necessary.

Homemade Bread Crumbs
Fresh bread can be placed on baking sheets and baked in a 250 F. oven until firm. Allow slices to cool to room temperature, further removing moisture and grind to desired density.
