Slow Cooker Italian Sausage Soup

Ingredients -

1 pound Hot or Mild Italian Sausage
1 medium White Onion, coarsely chopped
1 Green Bell Pepper, cut into half rings
1 (14.5 ounces) can Diced Tomatoes with Juice
1 (15 ounces) can Great Northern Beans
2 (14 ounces) cans Beef Broth

 
Preparation:

1. Brown the sausage in large skillet over medium heat. Use wooden spoon to break up during cooking.

2. Drain off excess fat. Add sausage to slow cooker.

3. Add onion and bell pepper to skillet. Sauté until soft.

4. Add onion and bell pepper to slow cooker.

5. Stir in diced tomatoes, Great Northern beans, and beef broth

6. Cover and cook on LOW for 7 to 8 hours.

Canned beans are a great ime saver. Purchase dried beans to save a little money and pre-soak beans overnight before using.

The soup works well with either a hot or mild sausage, although the hot sausage is a little more Italian.
