Creole Tomato Soup

Ingredients -

1/4 cup sliced Green Onions
1 clove Garlic, minced
1 tablespoon Butter
2 (12 ounces) cans Vegetable Juice Cocktail
1 cup Cold Water
1/4 cup Uncooked Long-Grain Rice
1/2 teaspoon coarse Salt
1/4 teaspoon Dried Thyme, crushed
1 Bay Leaf
1 (4-1/2 ounces) can Small Shrimp, drained

 
Preparation:

1. Add butter to stockpot. Sauté green onion and garlic until tender, about 1 minute.

2. Stir in vegetable juice cocktail, cold water, uncooked rice, coarse salt, dried thyme, and bay leaf.

3. Bring to a boil over high heat.

4. Reduce heat to low. Simmer 25 minutes.

5. Stir in shrimp. Simmer until heated through.

6. Remove bay leaf before serving.
